Viet Fish Simmered in Caramel Sauce

My second attempt at making Vietnamese style food, this time with fish in a traditional cooking motif. The Vietnamese call this motif kho which is pretty much a variety of different types of meat simmers in a special caramel sauce. I altered the recipe to include less sugar for health reasons, but it still turned out delicious.
